ABOUT Khotto/idli Batter Steamed in Jackfruit Leaves RECIPE

Khotto is an authentic south indian dish, specially prepared by GSB community during festivals.

Ingredients Serving: 5

  1. Jackfruit leaves 40
  2. 1 cup urad dal
  3. 3 cups idli rava
  4. Salt to taste
  5. Bamboo sticks to make the jackfruit leaves container

Instructions

  1. Wash & Soak urad dal for at least 4-5 hours.
  2. Grind to smooth paste using soaked urad dal water.
  3. Wash idli rava and then mix it with the ground urad dal batter.
  4. Add salt and leave it overnight or 7-8 hours for fermentation.
  5. For jackfruit leaves/ khotto containers, wash jackfruit leaves well. Now take 4 leaves then join four leaves and make container as shown in the picture.
  6. Next day boil water in the idli steamer. Now fill the container with the batter and steam for about 30 minutes.
  7. Serve hot with chutney or sambar.
