ABOUT Nawabi Dum Biryani RECIPE

This is inspired from a Tarla Dalal recipe that I read years back.

Ingredients Serving: 6

  1. 2 cups chopped onion
  2. 3 green chilies, 2 dried red chilies
  3. Chopped vegetables carrot, cauliflower, potatoes, peas
  4. basmati rice 3 cups
  5. Ginger Garlic Paste
  6. Spices: cloves, bay leaf, anise, cinnamon sticks
  7. 1 cup curd
  8. Salt to taste
  9. Cashews, raisins and cranberries for decorating

Instructions

  1. Cook the rice with a bay leaf and add saffron to little milk and add to water for cooking rice.
  2. Once the rice cooks set it aside.
  3. Boil the veggies with a little salt and turmeric.
  4. In a pan add some butter and oil and put a couple of cardamom, bay leaf and cinnamon sticks.
  5. Add the ginger garlic paste and sauté till golden.
  6. In a mixer chop 1 cup cut onions with rest of spices like anise, cardamom, bay leaf, green and red chilly and curd.
  7. Add this to the sautéed with the ginger garlic paste.
  8. Add salt and add the vegetables and sauté for few minutes.
  9. Toss the rice and take a couple of aluminum foils to cover for dum cooking.
  10. Heat some ghee add cashews, raisins and cranberries and sauté till golden.
