Ingredients Serving: 5

  1. Urad dal : 2 cups
  2. Salt to taste
  3. Baking soda : 1 tsp
  4. Semolina : 3 cups
  5. Dahi : 1 cup
  6. Oil for deep fry
  7. For tadka : 10 to 12 curry leaves, 1 tsp mustard seed, 3to 4 dry red chilli and 4 to 5 tbsp. Refined oil
  8. Boiled and peeled potato : 10 to 12 medium size
  9. Onion : 2 large
  10. Ginger : 1.5 inch
  11. Garlic : 5 to 6 large cloves
  12. Oil : 4 to 5 tbsp. For gravy
  13. Turmeric powder : 1 tsp
  14. Red chili powder : 1 tsp
  15. Meat masala : 1.5 tsp
  16. Finely chopped onion - 1
  17. green chili - 1
  18. thin sev [as required]
  19. finely chopped coriander leaves [handful]
  20. black salt for garnishing

Instructions

  1. Preparation of bada : first wash and soak the skinless urad dal for for 4 to 5 hrs and after 5 hrs drain the excess water and make a fine paste. In this paste add semolina, baking soda and salt.
  2. Mix all the ingredients and the batter is too thick add water in it to make a medu bada batter consistency. Leave the mixture for 15 to 20 minutes.
  3. Heat oil in a karai and take small portion of bada batter in your hand and make a whole in the center and then fry it.
  4. Like wise fry others.
  5. In a big vessel take t cups of water add 3 tbsp. Of salt in it along with 1 cup of dahi. Mix everything wrll.
  6. In a tadka pan heat e tbsp. Of refined oil and add 1 tsp of mustard seeds, 3 to 4 red chili and 10 to 12 curry leaves in it. When it stats to sputter add this tadka to the yogurt mixture and mix everything well.
  7. Put all the fried badas in the yogurt water mixture and leave them for 2 to 3 hrs.
  8. Preparation of aloo dum: first make a paste of onion, ginger and garlic.
  9. In a kadai heat oil and add the above masala mixture in it followed by turmeric and red chili powder.
  10. Mix every thing well and fry till oil comesto out from the masala.
  11. Cut the boiled potatoes in to cube size nd add them in to the above masala mixture.
  12. Season it with salt and add meat masala powder in it. Mix everything well and fry for more 5 minutes.
  13. After 5 minutes add 3 cups of water in it and cook it in high flame for more 10 minutes.
  14. After 10 minutes switch of the flame and aloo dum is ready.
  15. First take 1 dahi bada in your hand and squeeze it gently in your hand and place it in a late. Like wise arrange 4 to 5 dahu bada in a plate. Then pour 2 to 3 tbsp. Of aloo dum over it.
  16. Then sprinkle some chopped onion, green chili and coriander leaves over it. Then sprinkle some black salt and thin sev over it.
  17. Then pour 1 tbsp. Of yogurt over it and the famous odia dahi bara aloo dum is ready.
