ABOUT Peanut Coriander Nimbu Saan RECIPE

On sunny afternoons in the hills in chill winters, people while enjoying Sunshine or engaged in some routine chore definitely love to relish Nimbu Saan. All ingredients are sourced locally and seasonal. It is a tangy and finger licking dish that is eaten almost every day. Rich in fiber, antioxidants, vitamins and specially Vitamin-C, it contributes to good health in winters. It is a great appetizer as well as energy booster.

Ingredients Serving: 6

  1. 500 grams fresh thick curd
  2. 3 tablespoons peanuts
  3. 1 bunch fresh green coriander
  4. Salt and jaggery according to taste
  5. 1 lime
  6. 2 oranges
  7. 2 ripe bananas
  8. 1 pomegranate


  1. Take peanuts in a thick bottom wok. Roast on medium flame. Stir continuously. Soon the peanuts will begin to crackle and change colour. Turn off the heat. Leave aside to cool.
  2. Clean coriander and wash nicely. Chop the tender stems and leaves.
  3. Take roasted peanuts and coriander in chutney maker. Blend. Add water if the paste is thick and not smooth. You should get a very smooth and fine paste.
  4. Whip curd until smooth. Add salt and jaggery. Crush jaggery so that it dissolves in curd. Add peanuts and coriander paste to curd. Keep aside.
  5. Take a sharp knife and remove the outer thick skin (rind) of the lime and oranges . Remove the juicy hair carefully. Discard white membranes and seeds.
  6. Peel and cut bananas. Peel and collect pomegranate seeds.
  7. Add all the fruits to curd. Mix well and serve fresh.
  8. Peanut coriander nimbu saan is ready to relish.
