ABOUT Cauliflower Yakhini RECIPE

Yakhini is popular dish of kashmir. I have made its vegetarian version. The delicious and mouthwatering cauliflower/ gobhi Yakhini is enjoyed by all. This dish is often prepared for special occasions including parties or festival. This Yakhini is a good option when you want to cook something different.

Ingredients Serving: 5

  1. 1 small cauliflower
  2. 1 medium capsicum
  3. Ginger garlic paste 1 teaspoon
  4. 1 cup Curd
  5. Red Chilli powder 1 teaspoon
  6. Fennel seeds (Saunf) powder 1 teaspoon
  7. Turmeric powder 1 teaspoon
  8. Dhaniya powder 2 teaspoon
  9. Salt as per taste
  10. 2 - 3 laung / Cloves
  11. 2- 3 whole black Pepper corns
  12. 1 Tomato
  13. 1 teaspoon Cumin seeds
  14. Oil 1 tablespoon
  15. 2 teaspoon Besan / Bengal Gram Flour

Instructions

  1. First cut cauliflower into florets and capsicum into small pieces and remove all seeds. Wash it properly. Keep it aside on a strainer for drying all water .
  2. Now take a pan, add 2 teaspoons oil, add cumin seeds, black pepper corns , cloves, add ginger garlic paste and saute it for 5 minutes.
  3. Add 2 teaspoon besan, saute it for 5 minutes. Add all the dry masalas like turmeric powder, red chilli powder, dhaniya powder , fennel seeds powder and salt as per taste.
  4. Add curd to the mixture and stir continuously until oil separates.
  5. Add 1 cup water, let it boil on sim for the gravy.
  6. Till then deep fry florets until they become golden brown.
  7. Add fried floerts to the gravy. Add chopped tomatoes and cover it for 5 minutes.
  8. Serve hot with chapati , naan or rice.
