Ingredients to make Pineapple Pastry Cake

  • 1 cup all purpose flour
  • 1 & 1/4 tsp baking powder
  • 1/4 cup butter
  • 1/2 cup + 2 tbsp yogurt
  • 1 cup powdered sugar to taste
  • 1/2 tbsp water
  • 1/2 Tsp Vanilla essence
  • 1/8 tsp salt or pinch
  • 1/2 cup pineapples - chopped fine (fresh or canned)
  • 1.5 cup cream chilled
  • 2 tbsp sugar
  • pineapple slices for garnish

How to make Pineapple Pastry Cake

  1. Preheat oven @ 180 c/350 f .Sieve All purpose flour & baking powder in a big bowl. In another bowl, add the salt, sugar, butter, water and vanilla.
  2. Beat the mixture using a whisk or an electric beater till well blended. Now add dry ingredients into wet ingredients slowly. Once mixed properly, add Yogurt & mix gently. Do not overbeat cake Batter.
  3. Grease pan with butter or oil. Dust with all purpose flour. Pour batter into pan & reduce temperature to bake cake on 160 c /325 f. for 25 to 30 min or Check with a toothpick if it comes clean, take it out of the oven.
  4. Remove cake carefully from oven & keep on a wire rack to cool down completely. Cut into halves. Whip chilled cream adding sugar. Do not over beat cream otherwise, it will turn into butter.
  5. Place one sponge on the plate, add pineapple juice evenly spread a layer of cream over this and cover topped with chopped pineapple pieces cover with whipped cream. Put second half on top & repeat the same process.
  6. Finally cover all sides with whipped cream & decorate with pineapple pieces. Cut in the desired shape & serve.
