ABOUT Eggless Kiwi Muffins RECIPE

What happens when a great tasting nutritional fruit is made into a dessert! Heaven right:) And you will love it even more when you know it is an eggless treat. If you know me by now, you know I love the addition of fruits in my cakes. This time it is KIWI. The kiwi is an excellent source of vitamin C and potassium.

Ingredients Serving: 10

  1. 1 cup all-purpose flour
  2. 1⁄2 cup sugar
  3. 1⁄2 teaspoon baking soda
  4. 1⁄2 teaspoon ground cinnamon
  5. 1⁄4 teaspoon ground cloves
  6. 1 pinch of salt
  7. 1 ripe banana
  8. 1⁄2 cup milk
  9. ½ teaspoon vanilla extract
  10. 2 tablespoons butter, melted
  11. 2 kiwi fruits, peeled and pureed

Instructions

  1. Weigh and combine all the dry ingredients. Sift through a sieve – this helps to get a much lighter muffin.
  2. In another bowl, beat together the pureed banana, milk, pureed kiwi, vanilla extract and melted butter.
  3. Stir into dry ingredients until just moistened.
  4. Fill paper lined muffin tins 3/4 full. Bake at 180 degrees C for 15-19 minutes or until a toothpick comes out clean from the middle.
  5. Cool 5 minutes before removing from the pan to a wire rack.
  6. Enjoy it warm with a hot cuppa’coffee.:)
