Savoury biscuit/cookies made by the famous Iyengar Bakeries in Bangalore, adapted to a healthier version :)

Ingredients Serving: 4

  1. Whole-wheat Flour – 1 cup
  2. All-purpose Flour – 1/2 cup
  3. Butter/Margarine/Shortening – 1 stick (115 gm) I used a 100 gm slab of Amul Lite
  4. Finely chopped green chilies – 1 tsp (about 2 chilies)
  5. Finely chopped curry leaves – 2 tbsp
  6. Finely chopped coriander – 1 tbsp
  7. Red chili flakes – 1/2 tsp
  8. Carom seeds/ajwain – 3/4 tp
  9. Baking Powder – 1 tsp
  10. Thick yogurt – 2 to 3 tbsp
  11. Salt – 1/2 tsp (adjust if using salted butter)
  12. Oil for greasing

Instructions

  1. Preheat oven to 160 C/320 F; line and grease a baking sheet with parchment/baking paper.
  2. Sift flour, baking powder, salt and use a light whisk to mix it well.
  3. Add the carom seeds, green chilies, red chili flakes, curry leaves and coriander leaves.
  4. Chop the butter in cubes and add to flour.
  5. Use your fingers to run the flour with the butter, until it resembles bread crumbs.
  6. Begin to knead it, and add yogurt 1 teaspoon at a time, and only as much as you need to bind together a stiff dough.
  7. Roll out discs, about 3 mm thick, and cut out round cookies.
  8. Prick each cookie with a fork in several places to stop them from puffing.
  9. Bake for 12 to 15 minutes; these cookies will not brown too much so 15 minutes is enough.
