ABOUT Malai Chicken Tikka RECIPE

Chicken Malai Tikka Recipe – a comparatively less spiced recipe from the fiery tikka family.

Ingredients Serving: 4

  1. 800g boneless Chicken cubes
  2. 1/4 cup  cheese, grated
  3. 4 teaspoons coriander leaves, chopped
  4. 1 tablespoon cornflour
  5. 1/2 cup fresh cream
  6. 1/2 thick yogurt
  7. 1 egg
  8. 3 tablespoons garlic paste
  9. 3 teaspoons ginger paste
  10. 3 green chilies, chopped fine
  11. 1/2 teaspoon ground mace
  12. 1⁄2 teaspoon ground nutmeg
  13. oil, for basting
  14. salt as per taste
  15. 1teaspoon white pepper powder

Instructions

  1. Mix the ginger and garlic pastes, white pepper powder and salt. Rub mixture onto the chicken pieces. Set aside for 15 minutes.
  2. Beat together egg, cheese, green chillies, coriander, cream, yogurt, mace, nutmeg and cornflour and rub chicken pieces with the mixture.
  3. Keep aside for 3 hours. String together chicken pieces on a skewer an inch apart.
  4. Roast on a charcoal grill for 5 minutes or in a preheated oven at 275ºF for 7 minutes. Remove.
  5. Hang skewers for 5-7 minutes to let excess moisture drip off. Brush with oil and roast again for 3 minutes
