ABOUT ZAFRANI PHIRNI RECIPE

Let’s welcome the pious month of Ramadan on a sweet note with a fragrant scrumptious sweet Zafrani Phirni.

Ingredients Serving: 4

  1. 1litre+1/4 cup(warm)
  2. full cream milk 1/2 cup
  3. rice 2 tablespoon
  4. almonds, blanched peeled and slivered 1/2 cup
  5. sugar (you may add more if preferred) 1 teaspoon
  6. cardamom powder - 1 pinch
  7. A generous 2 pinches of good quality saffron
  8. 2 drops of kewda(screw pine) essence

Instructions

  1. Clean, wash and soak rice for an hour.
  2. Drain the water and spread it on a plate to dry for 1 and half hours.
  3. Grind the dried rice to coarse powder
  4. Soak saffron in 1/4 cup of warm milk and keep it aside.
  5. In a heavy bottom pan, add 1 litre of milk. let this boil and then add the ground rice.
  6. Cook until the rice is cooekd, add, saffron, cardamom powder, and mix well. cook until creamy.
  7. Add kewda essence and mix. serve with pistachios and almonds on top and serve.
