ABOUT Mango Sondesh RECIPE

Sondesh in its most classical form is made only with pure chhana or casein, no khova or condensed milk is used and subtly flavoured with rose and pistachios. When mango sondesh appears on display at sweet shops it pronounce the onset of summer!

Ingredients Serving: 8

  1. 1 litre Milk (full fat)
  2. 1 cup Ripe Mango pulp (thickened & sweetened with sugar)
  3. 1/2 teaspoon cardamom powder
  4. Juice of 2 Lemons
  5. few cloves and curry leaves to give shape and design

Instructions

  1. Boil the milk fully, curdle it using a juice of lemon
  2. Drain the whey well using a muslin cloth and collect the paneer/ fresh chenna
  3. Knead the chenna for 10 minutes until it become soft and smooth.
  4. Warm a non-stick pan and put the chenna along with sweetened mango pulp
  5. Mix thoroughly and cook it on low heat while constantly stirring it.
  6. Add the cardamom powder now and mix well
  7. You will notice that it gradually changes its color and texture, when towards done it will become lumpy or dough like.
  8. Take it off immediately from the heat and transfer into a bowl. Our "maakha" /Sondesh mixture is ready to be moulded, once slightly cool
  9. If you are using moulds, then grease the inner design slightly with ghee
  10. Press the maakha into the moulds, smooth the edges giving a neat shape and gently take them out of the mould.
  11. I have shaped them in form of fruits:pumpkin, orange and of course, mango
  12. Shape the pumpkin, round. Press the top gently and insert an inverted clove.
  13. Gently make curved design using a blunt knife/fork.
  14. Similarly create any orange/yellow coloured fruit Sondesh
  15. Serve at room temperature or chilled.
  16. Store airtight and consume within a week
