This is a wonderfully moist and fudgy gluten free cake, inspired by Green Kitchen Stories

Ingredients Serving: 8

  1. buckwheat flour - 170gms
  2. Baking powder - 2 tsp
  3. Salt - 1/4 tsp
  4. Cocoa powder - 25 gms
  5. Coconut oil - 125 ml
  6. Dark chocolate - 50 gms ( I used 70%)
  7. Honey - 100 ml
  8. Dates pitted and chopped - 50 gms
  9. Eggs - 3
  10. Vanilla extract - 2 tsp
  11. Beetroot grated - 120 gms
  12. Chocolate glaze
  13. Cocoa powder - 15 gms
  14. Honey - 50 ml
  15. Coconut oil melted - 10 ml

Instructions

  1. Preheat oven to 180 degree centigrade. Grease a 7-inch round cake pan. Dust it with some cocoa powder.
  2. In a small bowl, sift the buckwheat flour, baking powder, salt and cocoa powder together.
  3. Combine coconut oil, honey, chopped dates and dark chocolate in a large saucepan. Warm the mixture over very gentle heat and stir till the chocolate melts.
  4. Turn off the heat. Add the grated beetroot. Mix well. Let the mixture cool a bit and then beat in the eggs and vanilla.
  5. Stir in the dry ingredients, mix until you get a thick batter. Pour into the prepared pan and bake for 25-30 minutes or until a skewer comes out clean.
  6. Turn out on a cake rack to cool. serve as is or glazed.
  7. For the glaze: Mix all three ingredients in a small bowl till thick and glossy. Taste and adjust for sweetness.
  8. Pour over the cooled cake. Sprinkle some nuts, seeds and cocoa powder.

This is such a good mixture of healthy ingredients! Very beautiful to look at as well :D
