Grape & Yogurt Parfait (with Grape Coulis)

ABOUT Grape & Yogurt Parfait (with Grape Coulis) RECIPE

Parfait, meaning ‘Perfect’ in French, is traditionally a frozen dessert, dating back to around 1894. It is usually made with a combination of eggs, cream and sugar syrup, that form a custard base, over/with which are added flavoured jellies, fruits, and often, granola for the crunch. This one is healthy, and is made with low-fat Yogurt.

Ingredients Serving: 2

  1. Low-fat Greek Yogurt or Plain hung curd – 1 cup
  2. Low-fat Cream – 2 tbsp
  3. Strawberry flavoured cornflakes or plain cornflakes – 2 to 3 tbsp, crushed lightly
  4. Black grape coulis – 1/2 cup (recipe below) OR Grape jelly/Sauce
  5. Seedless Black grapes – 8 to 10
  6. Seedless Green grapes – 8 to 10
  7. Vanilla extract – 1/2 tsp
  8. Grape Coulis - Seedless black grapes – 10 to 15
  9. Sugar – 1 tbsp
  10. Lemon juice – of 1/2 lemon
  11. Corn flour – 1 tbsp, dissolved in water.

Instructions

  1. For the coulis/grape sauce, heat a pan and add the grapes and sugar, stirring continuously.
  2. Once the grapes begin to soften, use the back of a spoon to mash them lightly.
  3. Add the lemon juice, and when the coulis is nice and mushy, turn off the flame.
  4. Strain the coulis, and pour the liquid back into the pan, turning down the heat.
  5. Add the cornflour, and stir until the sauce is thick but flowy.
  6. Cool in the fridge for 30 minutes to an hour.
  7. In a bowl, pour the yogurt, and vanilla extract.
  8. You don’t need to add sugar if the yogurt is sweetened, but add a teaspoon if you find it tangy.
  9. Beat well, and chill well, before you begin layering your parfait glass (or any other tall glass).
  10. Start with a layer of crunchy granola or cornflakes at the bottom.
  11. On top of this, add a nice, fat layer of yogurt with a spoon, or pipe it in.
  12. Layer with grape coulis, and pieces of green and black grape.
  13. Repeat process until glass is filled. Top with a final sprinkle of cornflakes, and grapes.
  14. Serve immediately to enjoy the crunch of granola/cornflakes.

Nice recipe. Instead of sugar how about milkmaid?
