50 g dark cooking chocolate
6 tbsp flour
1 tbsp cocoa powder
1/2 tsp baking powder
1/4th tsp baking soda
100 g castor sugar
3 tbsp butter
75 ml buttermilk
1 egg
40 g zucchini shredded

Instructions

Pre-heat the oven to 180 degrees C
In a medium sized bowl, whisk the butter and sugar. Add the egg and whisk till well incorporated
Melt the chocolate and add to the above mixture. Stir in the shredded zucchini
Sift the flour, cocoa powder, baking powder and baking soda.
Now add the flour mixture and buttermilk alternately starting and ending with the flour.
Spoon in to a 6 inch greased cake tin and bake for 15-20 minutes or till a skewer comes out clean.
