Ingredients Serving: 4

  1. Mix 5 daals. ( Toor daal, masoor daal, urad daal, moong daal, chana daal) 1 cup.
  2. onion 2
  3. tomato diced 2 .
  4. potato chopped in small cubes 1
  5. Bottle gourd chopped in small cubes 1/4 cup
  6. Brinjal chopped in small cubes 1
  7. pumpkin chopped 1/4 cup
  8. Cauliflour 1/4 cup
  9. carrot chopped fine 1
  10. French beans 1/4 cup.
  11. garlic crushed 1 tbsp
  12. ginger grated 1 tsp
  13. Green chillies crushed 2
  14. Red chilli powder 1 tsp
  15. turmeric 1/2 tsp
  16. Dhanshak masala 1 tbsp/ garam masala.
  17. coriander leaves chopped
  18. cinnamon stick 2 small pieces
  19. cloves 6 to 8
  20. Bay leaves few.
  21. oil 2 tbsp
  22. Glarified butter 2 tbsp
  23. rice 1 1/2 cup.
  24. ghee 1 tbsp.
  25. sugar 2 to 3 tsp

Instructions

  1. Pressure cook all daals. Don't over cook.
  2. Heat 1 tbsp oil in a pan. Saute chopped French beans, Potato pieces, Cauliflower pieces, Carrot pieces one by one by adding little salt.
  3. Add bottle gourd, brinjal and pumpkin in same oil . Cook covered.
  4. Keep all vegetables aside.
  5. Heat 1 tbsp oil in a heavy bottomed kadhai.
  6. Add Onions. Saute a while and add Cinnamon, Cloves, bay leaves.
  7. Fry for a minute. Add ginger, garlic, green chillies crushed.
  8. Saute, add turmeric, chilli powder, dhandha masala, Coriander powder. Fry on medium flame.
  9. Add tomatoes. Saute for 2 minutes. Add mixed daal. Don't blend daal.
  10. Adjust salt. Let the daal boil for 5 minutes.
  11. Add all the Vegas. Mix every thing. Boil for a while ( 3 minutes)
  12. Your dhanshak daal is ready.
  13. Heat a pan. Add sugar. Allow it to caramelize. Add hot water and rice.
  14. Add salt and allow it to cook. while it is still cooking add seasoning of Cumin , cloves and cinnamon to the rice.
  15. Let the rice cook fluffy.
  16. Serve with daal and with garnish of coriander leaves.
  17. You also can serve a Zeer and sesame paratha with dhanshak daal.
