ABOUT Aam Ki Launji(Raw Mango Chutney) RECIPE

Aam ki Launji is essentially a Pickle type Rajasthani chutney made by cooking raw green mango pieces with basic Indian cooking spices and sugar.

Ingredients Serving: 4

  1. 500 gm green mango
  2. 2 tablespoon oil
  3. 1/2 teaspoon cumin seeds(jeera)
  4. 1/2 teaspoon fenugreek seeds (methi)
  5. A pinch of asafoetida
  6. 1 teaspoon fennel seeds (saunf)
  7. 1/2 teaspoon turmeric powder
  8. 1 cup water
  9. Salt to taste
  10. 1 teaspoon black salt
  11. 1/2 teaspoon red chilli powder
  12. 1 cup sugar
  13. 1/2 teaspoon garam masala


  1. Wash and peel the green mango. Cut into cubes and remove seeds.
  2. Heat oil in a pan add cumin seeds, asafoetida, and fennel seeds and allow them to crackle.
  3. Add turmeric powder and saute and then add peeled and cubed mango pieces.
  4. Add salt and stir and mix well and add water and cover it and cook for 3 to 4 minutes.
  5. Add red chilli powder and sugar and mix well and cover it with lid.
  6. Cook until sugar dissolves, mango cubes turn tender and mixture becomes thick in consistency.
  7. Stir occasionally to prevent sticking. Add garam masala and mix well.
  8. Aam ki launji is ready to serve. Store it in an airtight container in the refrigerator and consume it within 7 days.
  9. Adjust sugar according to the sourness of mango and your taste preferences.
  10. This is instant aam launji recipe in which I added water to keep the amount of sugar low.
