1 In a clean bowl mix sugar and yeast and add 1/4 cup water and milk mixture. Let it be bloom for ten mnts
2 now mix maida and whole wheat flour add salt and 2tsp oil.
3 once yeast bloom mix that with flour and now kneed with the rest of water milk solution.
4 knead this dough for next 15 mnts dust the floor time to time. One it done you can feel. It's elasticity. The dough will be sticky at this point too.
5 now oil a big bowl and make a ball of dough and keep the dough in that and cover with cling wrap and let keep it in a warm place to be get double in size. It take around 40/60 mnts.
6 Now take it out and punch the bubble and again knead for two three mnts on dust floor.
7 make small balls and make small rotis and keep them in a lined tray. Do repeat this with rest of dough.
8 brush with water on top and sprinkle some onion seeds and Chopped coriander. Press lightly with rolling pin.
9 aft ten or fifteen mnts bake them in a preheated oven at 200 dg for around 20/25 mnts till light pink spot come on top.
10 take them. Out and brush w melted butter.
Matara -
1 boil soaked Matara with a pinch of baking soda and 1/2 tsp salt in a pressure cooker
2 make a paste of all Masala.
3 Now heat the oil and deep fry potatoes and keep aside.
4 in the same oil add 1 tsp cumin seed once they crackled add red chillies tear them roughly
5 Now add the grind Masala and cook until oil get separate.
6 add dry Masala salt and tamarind paste cook for a while and then add cooked Matara and fried potatoes. Add 1 cup of water and cook for 10 mnts in low flame. Sprinkle Chopped coriander and switch off the gas.
7 serve hot with kulcha.
