ABOUT Mansoon mania "Delicious punjabi chole/chickpeas curry" RECIPE

Punjabi chole is one of my favourite dish in manaoon specially. It is a popular North Indian curry recipe. This chole recipe is restaurant-style and it's taste is delicious and is made by kabuli chana. In this recipe, chana are cooked with onions, tomatoes, and lots of spices. While cooking chana, I added tea powder/tea bags because tea helps in giving chana a dark brown colour. If you think it will change the taste, then I assure you it won't change. If you and your family love authentic Punjabi food, then you are going to love this recipe. Here, I am sharing the delicious chole recipe:

Ingredients Serving: 6

  1. 1 cup Kabuli chana/chickpeas
  2. 2-3 Onions (finely chopped)
  3. 2-3 Tomatoes (puree)
  4. 2 teaspoon Ginger-garlic and green chilli paste -
  5. 1 Bay leaf
  6. 2 Black Cardamom -
  7. 1 inch Cinnamon stick
  8. Cloves 3-4
  9. 1/2 teaspoon Cumin seeds
  10. 1 tsp Tea powder (or you can use 2 tea bags)
  11. 7-8 Black pepper corns
  12. 1 teaspoon Red chilli powder -
  13. 1/2 teaspoon Turmeric
  14. 1 teaspoon Coriander powder -
  15. 1 teaspoon Cumin powder -
  16. 1 teaspoon or as per your taste Garam masala
  17. As required Chana masala - 2 teaspoons (I use pushp chana masala)
  18. As required Salt
  19. 4 tablespoon Butter/ Ghee/ Oil
  20. For garnishing Coriander leaves
  21. 1 teaspoon Lemon juice

Instructions

  1. Wash and soak chana overnight in 4 cups of water.
  2. Boil the soaked chana in 3 cups of water with salt, bay leaf, cinnamon stick, black cardamom, cloves, black pepper, and tea powder/ tea bags.
  3. Let the cooker whistle 3 times and let it simmer for 2 minutes and then switch of the flame.
  4. Now open the lid and wash chana with filter water to remove tea and drain all the excess water.
  5. Heat butter/ghee/oil in pan. Add cumin seeds and when the cumin seeds sprinkle, add ginger garlic and green chilli paste and saute nicely.
  6. Now add chopped onion and saute, till it becomes golden.
  7. Add red chilli powder, turmeric, and coriander powder and mix it well.
  8. Now add tomato puree and saute until oil comes out.
  9. Then add drain and cooked chana. Add some water as per your quantity. Mix it well.
  10. Lastly add salt, cumin powder, garam masala, and chana masala.
  11. Mix it well and cook for 15 to 20 minutes in low flame.
  12. Last add lemon juice.
  13. Serve hot and garnish with onion rings and coriander leaves.
  14. Serve with bhature or lachha parantha or namkeen parantha or rice.
