I have tried out different variations of eggless cakes before , but today got perfect no fail egg less cake recipe and very happy to share it with you. One of my friend’s had asked me to put up egg less baking recipe on my website, and this is specially for you my friend . Though I have used butter in my sponge cake, you can substitute it with oil. This is a super easy cake recipe, and if you want your sponge cake to be chocolaty too, add two tablespoons cocoa powder while mixing and increase the amount of milk by 2 tablespoons. You will wonder how I got the netted design on top of my chocolate icing. That’s because I pressed wire rack on top of it slightly, to give that design.

Ingredients Serving: 10

  1. 1 1/2 cups all purpose flour
  2. 3/4 Cup White Granulated sugar
  3. 1 Teaspoon Vanilla essence
  4. 1/2 Cup Salted butter kept at room temperature
  5. 1/3 Cup Warm Milk
  6. 1 Cup Hot boiling water
  7. 1 teaspoon baking powder
  8. 1/2 Teaspoon baking soda
  9. 1 Teaspoon Lime or lemon Juice
  10. 5 Tablespoons Salted butter kept at room temperature
  11. 2 Cups Powdered sugar
  12. 5 Tablespoons Cocoa Powder
  13. 1 teaspoon vanilla essence
  14. 5 Tablespoons Milk
  15. 1 teaspoon vanilla essence


  1. Preheat the oven at 350 degree Farenheit . Sieve all the dry ingredients like, all purpose flour, sugar , baking powder and baking soda in a bowl.
  2. Take butter and sugar in a bowl and beat with electric beater till it is nicely creamed and fluffy.
  3. Add warm milk and beat for few more seconds.
  4. Cut and fold dry sifted ingredients into this wet mixture using spatula. Add lime juice and mix .
  5. Add hot water and mix well.Finally, add vanilla essence. Mix well.
  6. Pour the cake batter in a greased rectangular cake pan. Bake it for 35 minutes or until the toothpick comes out clean when inserted at the center of the cake.
  7. Keep it out on a rack for cooling and meantime, prepare chocolate frosting. Method for Chocolate Buttercream Icing: Now let's see how to make frosting or icing. Sieve powdered sugar and cocoa powder in a bowl.
  8. Beat butter for few seconds to make it fluffy and add 1/2 of the sifted cocoa, sugar mixture in it. Add milk as required and beat at a low speed till the frosting gets creamy.
  9. Add the remaining half and continue beating. You need to scrap the sides of the bowl in between while beating. You might want to adjust milk and sugar depending upon the consistency of frosting.
  10. If the frosting looks too thick, add little more milk and vice versa. Add vanilla essence and mix.
  11. Flip the cooled cake on a plate and slice it in between in order to divide into two
  12. Arrange some silver foil pieces on a plate where you want to decorate the cake , in order to avoid the mess. Place one slice of the cake on it and add some icing or frosting on top.
  13. Spread it with the spatula and place the other slice of the cake on top. Add the icing on top and sides and spread it well. Smoothen it well with spatula. Decorate with anything of your choice.
  14. Cut and serve.I have decorated my pastry pieces with cherries while serving.
