ABOUT Sukto RECIPE

Sukto is a very popular delicious healthy traditional bengali mix vegetable preparation with bitter gourd. Sukto is a dish which is prepared without adding cillies. You can add borboti and drumsticks and one more spice called randuni.

Ingredients Serving: 6

  1. Bitter gourd 4 small size
  2. Brinjal 1 medium
  3. Pumpkin roughly 60g
  4. Broad beans 7-8
  5. Radish 1 small size
  6. Raw banana 1/2 of a big one
  7. Potato 2 medium size
  8. Termaric powder salt and sugar as required
  9. Urad dal wari or bori 8-10 pieces
  10. Ginger Cumin paste 2 table spoon
  11. Mustard paste 1 and 1/2 table spoon
  12. Milk 1/2 cup
  13. Mustard oil for cooking
  14. Roasted 5 spice powder 3/4 teaspoon
  15. Ghee 1 teaspoon
  16. Water as required

Instructions

  1. CUT VEGETABLES BITTER GOURD BRINJAL RAW BANANAS BROAD BEANS PUMPKIN RADISH POTATOES
  2. DRY ROASTED 5 SPICES- NIGELLA SEEDS CUMIN SEEDS FENAL SEEDS FENUGREEK SEEDS AND MUSTARD SEEDS
  3. GRIND
  4. AND MAKE POWDER
  5. HEAT OIL
  6. ADD WHOLE 5 SPICES
  7. FRY
  8. ADD VEGETABLES
  9. FRY
  10. ADD TERMARIC POWDER
  11. ADD GINGER CUMIN PASTE (MIX WITH 1 TABLE SPOON WATER)
  12. MIX AND FRY
  13. COVER FOR FEW MINUTES
  14. REMOVE THE COVER
  15. ADD SUGAR AND SALT
  16. MIX WELL
  17. IN ANOTHER PAN HEAT OIL AND FRY THE URAD DAL BORIS
  18. NOW ADD THE FRIED BORIS TO THE MIX VEGETABLE
  19. MIX AGAIN AND FRY
  20. ADD WATER
  21. COVER IT FOR ABOUT 6-7 MINUTES
  22. REMOVE THE COVER
  23. MIX SLIGHTLY WATER TO THE MUSTARD PASTE
  24. ADD MUSTARD PASTE MIX
  25. STIR THEM ADD 1/2 CUP OF MILK
  26. AFTER FEW MINUTES SPREAD THE ROASTED 5 SPICES POWDER
  27. AND 1 TEASPOON GHEE
  28. MIX AND LEAVE IT FOR FEW MINUTES.
