ABOUT Bajra methi dhebra RECIPE

These are healthy discs prepared from iron rich bajra and fenugreek.Tradituonally this is prepared before Shitla satam when we eat cold food.These can be enjoyed hot with tea coffee or cold with curd and green chutney.

Ingredients Serving: 10

  1. Bajra flour 1 & 1/2 cups
  2. Wheat flour 1/2 cup
  3. Sour curd 1/4 cup
  4. Fenugreek leaves 3/4 cup
  5. Jaggery 2 tbsp
  6. Sesame seeds 1 & 1/2 tbsp
  7. Ginger,garlic,chilli paste 2 tsp
  8. Oil 1 tbsp
  9. Turmeric 1/2 tsp
  10. Red chilli powder 1 tsp
  11. coriander powder 1 tsp
  12. Asafetida 1 pinch
  13. Salt to taste

Instructions

  1. PREPARE ALL INGREDIENTS.
  2. MIX CURD AND JAGGERY TOGETHER.
  3. MIX TILL JAGGERY DISSOLVES COMPLETELY.
  4. TAKE 1 & 1/2 CUP BAJRA FLOUR AND 1/2 CUP WHEAT FLOUR IN A MIXING BOWL.
  5. ADD GINGER,GARLIC CHILLI PASTE,SESAME SEEDS.
  6. ADD CHOPPED FENUGREEK LEAVES AND LIGHTLY MIX.
  7. ADD CURD JAGGERY MIXTURE ,1 TBSP OIL AND ALL SPICES.
  8. NOW MIX EVERYTHING INTO A DOUGH.
  9. IF NEEDED ADD 1 OR 2 TBSP WATER.
  10. JUST APPLY OIL TO THE DOUGH AND COVER AND KEEP FOR 15 MINUTES.
  11. MAKE SMALL LEMON SIZED BALLS FROM THE DOUGH.
  12. NOW PAT WITH THE HELP OF FINGERS ON A POLYTHENE TO FORM A SLIGHTLY THICK DISC.
  13. LIFT FROM PLASTIC AND PUT IN HOT OIL.FRY 2 TO 3 DHEBRA AT A TIME ON MEDIUM LOW HEAT.
  14. WHEN DHEBRA TURN GOLDEN FROM BOTH SIDES REMOVE AND KEEP IN A TISSUE PAPER LINED BOWL.
