Ingredients Serving: 5

  1. 125 grams butter softened
  2. 3/4 cups sugar
  3. 3 bananas mashed
  4. 1 teaspoon vinegar
  5. 1 teaspoon baking soda
  6. 1/4 cup hot milk
  7. 2 cups self raising flour
  8. 1/4 teaspoon salt
  9. 25 grams butter softened
  10. 1 cup Icing sugar
  11. 1/4 cup cocoa
  12. Boiling water

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add mashed banana and beat well.
  3. Stir baking soda into hot milk and add to mixture.
  4. Add vinegar, salt and sifted flour. Stir until combined. Batter will be quite thick.
  5. Turn into a cake tin lined with baking paper and cook at 180°C for 45 min or until an inserted skewer comes out clean.
  6. Chocolate icing - Sift icing sugar and cocoa into a bowl.
  7. Add butter and 3 Tablespoons boiling water.
  8. If required add extra water 1 tablespoon at a time until you get the consistency you want.
