ABOUT Oven Roasted Veggie Enchilada RECIPE

Whole wheat tortillas wrapped in grilled vegetables served on a bed of Enchilada sauce and topped with cheese.

Ingredients Serving: 4

  1. Chopped Onion 1/2 cup
  2. Broccoli 1/2 cup
  3. Carrots 1/2 cup
  4. Coloured peppers 1/2 cup
  5. Corn 1/2 cup
  6. Tortilla 5 - 6
  7. Garlic paste 1 tsp
  8. Salt, pepper - to taste
  9. Cheese - 1.5 cups
  10. Enchilada Sauce- 2 cups

Instructions

  1. Preheat oven at 220 C.
  2. Take all the the vegetables and add oil, garlic, salt and pepper. Mix this well. Take this mixture and spread it in a tray.
  3. Roast it for 20 mins.
  4. Take a baking dish and spread half of the sauce.
  5. Simultaneously take a tortilla and stuff it with roasted vegetables and some cheese.
  6. Arrange all the rolls on the baking dish. Add the enchilada sauce on top.
  7. Sprinkle some cheese and chilli flakes.
  8. Bake in a preheated oven at 200 C for 25 mins.
