Ingredients Serving: 1

  1. All purpose flour 2 cups +1/4cup for dusting
  2. Oil 3 tablespoon
  3. 1/4cup ghee
  4. Cold water 1/2cup
  5. Oil to fry as required

Instructions

  1. SEIVE 2 CUPS FLOUR
  2. ADD 2 TABLESPOON OIL
  3. RUB WELL WITH PALMS MALE CRUMBLE LIKE TEXTURE
  4. ADD COLD WATER LITTLE BY LITTLE
  5. KNEAD WITH FINGERS
  6. MAKE A SOFT SMOOTH DOUGH
  7. COVER THE DOUGH AND KEEP ON REST FOR 30 MINUTES.
  8. MAKE EQUAL PART FROM THE DOUGH AND MAKE SMOOTH BALLS
  9. TAKE A DOUGH BALL AND ROLL IT
  10. MAKE A BIG THICK POORI
  11. APPLY 1 TSP GHEE ON THE FLOUR DISK AND SPREAD EVENLY.
  12. SPRINKLE 1 TSP FLOUR ON TOP OF GHEE ANS SPREAD EVENLY
  13. CUT A SLIT FROM CENTER OF TO THE CIRCUMFERENCE
  14. TAKE THE CORNER OF THE CUT AND ROLL IT INTO A CONICAL SHAPE
  15. TUCK THE LOOSE ENDS OF THE LARGER PART INWARD OF THE CONE
  16. CUT THE TOP OFF FROM THE POINTED END
  17. DIP SLIGHTLY IN OIL AND SET ASIDE ON A FLAT PALATE.
  18. COVER ALL READY CONES WITH DAMP COTTON CLOTH AND KEEP ON REST FOR 30 MINUTES.
  19. TAKE ONE CONE AND PLACE IT ON ROLLING SURFACE
  20. PRESS THE CONE GENTLY
  21. ROLL IT INTO A ROTI LIKE DISC
  22. HEAT OIL IN A WOK , SIMMER THE FLAME AND ADD ONE PARATHA SLOWLY IN HOT OIL
  23. POUR HOT OIL IN THE MIDDLE OF PARATHA UNTILL PARATHA IS PUFFED UP
  24. FLIP BOTH SIDE AND POUR OIL ON BOTH SIDE OF LUCHHI
  25. REMOVE FROM OIL THIS CRISPY GOLDEN PARATHA
  26. KEEP FRIED PARATHA ON TISSUE PAPER TO ABSORB EXTRA OIL
  27. FRY ALL DHAKAI PARATHA
  28. SERVE AFTER 20 MINUTES
  29. SERVE WITH CHOLAR DAL AND DOI
