ABOUT Matha kakera RECIPE

It is one of the traditional pitha of Odisha. 'Matha' means 'kneading'. Kakera means flat pitha with or without stuffing.  As it requires lot of time to knead the dough, so the name comes as 'Matha kakera' . It is one, among the 56 bhog prasad offered to the Lord Jagganath temple, Puri.

Ingredients Serving: 3

  1. Wheatflour 3cups
  2. Sooji 1cup
  3. Jaggery 1/2cup or more according to taste
  4. Ghee for deep frying as needed
  5. Bayleaf 2
  6. Saunf 2tbsp
  7. Crushed black pepper 1tsp
  8. Cardamom powder 1 tsp
  9. Grated ginger 1tsp
  10. Salt as per taste

Instructions

  1. BOIL WATER IN A KADHAI AND ADD 1TSP GHEE.
  2. ADD JAGGERY AND MIX.
  3. WHEN JAGGERY MELTS COMPLETELY ADD THESE INGREDIENTS.
  4. MIX WELL.
  5. TAKE 3CUPS WHEATFLOUR IN A BOWL.
  6. ADD 1CUP SOOJI
  7. MIX.
  8. ADD THE DRY MIXTURE TO THE KADHAI.
  9. MIX WELL TILL IT GETS THICK AND FORMS A DOUGH LIKE TEXTURE.
  10. ADD 1/2CUP GRATED COCONUT.
  11. SWITCH OFF AND COVER THE LID.
  12. TAKE OUT AND KNEAD WELL WITH GREASED PALM.
  13. DISCARD THE BAYLEAVES.
  14. KNEAD FOR 10-15MINS TILL IT BECOMES VERY SMOOTH.
  15. DIVIDE THE DOUGH INTO TWO EQUAL PARTS.
  16. TAKE ONE PART AND ROLL A BIG ROTI.
  17. CUT IN ROUNDALS WITH THE HELP OF A COOKIE CUTTER OR GLASS. OR SHAPE WITH YOUR PALMS.
  18. DEEP FRY IN MEDIUM HEAT GHEE/OIL TILL BROWN FROM BOTH THE SIDES.
  19. FLIP IN BETWEEN.
  20. TAKE OUT, COOL A BIT AND SERVE.
