This dish reminds me of my maternal home where in every festive day....rajwadi koftas are made which is relished by each guests in my home..

Ingredients Serving: 6

  1. For outer layer
  2. 2 cups gram flour
  3. 2 tsp oil
  4. Water
  5. 1 tsp jeera
  6. Salt
  7. For stuffing
  8. 1 cup coconut pwd
  9. 1 cup roasted sesame seeds pwd
  10. 1 cup khus khus pwd
  11. 1 cup finely chopped coriander mint leaves
  12. 2 tsp muskmelon seeds
  13. 5 almonds
  14. 1 tsp turmeric pwd
  15. 1 tsp red chilli pwd
  16. 1 tsp coriandwr pwd
  17. 2 tsp ginger garlic chilli paste
  18. 1/4 tsp garam masala
  19. 2 tsp oil
  20. For curry
  21. Oil 2 tsp
  22. Rai jeera 2 tsp
  23. Onion puree 1 cup
  24. Tomaro puree 2 cups
  25. Turmeric pwd 1 tsp
  26. Red chilli pwd 1 tsp
  27. Garam masala 1/4 tsp
  28. Coriander pwd 1 tsp
  29. Green chilli paste 1 tsp
  30. Blended puree of above masala mixture 1 cup
  31. Water 4 cups
  32. Salt

Instructions

  1. LETS START WITH OUTER LAYER. TAKE 2 CUPS OF GRAM FLOUR,2 TSP OIL,1 TSP CUMIN SEEDS
  2. ADD 1 TSP SALT AND MIX WELL.
  3. NOW ADD LITTLE WATER AND FORM A SEMI SOFT DOUGH
  4. ONCE DOUGH IS FORMED, COVER AND KEEP IT ASIDE.
  5. TAKE EACH 1 BOWL ONIONBARISTA, CHILLI GINGER GARLIC PASTE,COCONUT POWDER, SESAME POWDER, KHUS KHUS POWDER ,CORIANDER
  6. TAKE A BIG BOWL. ADD ROASTED SESAME SEEDS POWDER ,COCONUT POWDER ,KHUS KHUS POWDER
  7. ADD BARISTA, FINELY CHOPPED CORIANDER MINT, 2 TSP MUSKMELON SEEDS, ALMOND, GREENCHILLI GINGERGARLIC PASTE
  8. ADD SALT, 1/2 TSP TURMERIC POWDER, 1 TSP RED CHILLI POWDER, 1 TSP CORIANDER POWDER
  9. ADD 1/4TSP GARAM MASALA, 1/2CUP OIL AND MIX WELL
  10. NOW MIXTURE IS READY FOR STUFFING.
  11. ROLL SMALL CHAPATI OF DOUGH,SPREAD REDCHILLI POWDER MIXED IN OIL ON THE CHAPATI, PUT 1 SPOON OF MASALA
  12. NOW ENCLOSE CHAPATI TIGHTLY AS SHOWN SO THAT MASALA DOESN'T COME OUT ON FRYING
  13. REPEAT THE SAME FOR ALL AND KEEP IT READY TO STEAM
  14. STEAM IT FOR 10 MIN AND LET IT DRY FOR 30 MIN
  15. NOW KOFTAS ARE READY TO FRY.
  16. REMOVE FROM FLAME ONCE DONE .U CAN HAVE IT DIRECTLY OR MAKE CURRY. NOW LET'S MAKE CURRY
  17. HEAT OIL IN A WOK, ADD RAI JEERA AND FINE PASTE OF 2 ONIONS
  18. SAUTE ONION PUREE AND THEN ADD PUREE OF 4 TOMATOES. LET IT COOK FOR SOME TIME
  19. NOW ADD 1 TSP TURMERIC POWDER , 1 TSP RED CHILLI POWDER ,1 TSP CORIANDER POWDER, 1/2 TSP GARAM MASALA
  20. ADD 1 TSP GREEN CHILLI PASTE, 1 CUP BLENDED STUFF MASALA MIXTURE WHICH WE HAD FILLED INSIDE KOFTAS
  21. MIX WELL AND COOK TILL IT RELEASES OIL
  22. NOW ADD APPROXIMATELY 4 CUPS OF WATER AND BOIL
  23. ADD FRIED KOFTAS AND COOK FOR 15-20 MIN
  24. ONCE DONE. OFF THE GAS AND SERVE HOT
