ABOUT Mango Marmalade RECIPE

Mango Marmalade is a grated mango spread. I make this marmalade every monsoon. During heavy monsoons, when it becomes difficult to go to market for vegetables, mango marmalade comes to the rescue. Recipe inspiration: My M❤M!

Ingredients Serving: 0

  1. 1 kg totapuri mangoes (half-ripe and firm)
  2. 750 grams sugar
  3. 1/2 lemon - juice
  4. 1 tsp red chilli powder
  5. 1/4 tsp Salt
  6. 1 and 1/2 cup water
  7. 1 pinch food color - kesari

Instructions

  1. Wash, peel and grate the mangoes with a manual grater.
  2. Take a thick bottomed vessel or a pan. Mix sugar and water in it. The level of water should be such that it covers the sugar completely.
  3. Keep the vessel on the high flame. Stir the mixture at regular intervals till sugar dissolves completely. Remove the impurities/ foam on the surface, if any.
  4. Add lemon juice to avoid crystallization of the syrup.
  5. Add grated mangoes, red chilli powder and kesari food color. Let it boil for 30 - 40 minutes. Keep stirring the mixture at regular intervals.
  6. Check the consistency of the mixture. If the consistency is jam-like, mango marmalade is ready.
  7. Let it cool at the room temperature. Store in air-tight glass jars.
  8. Enjoy the marmalade with/as a spread on parathas, rotis, bread, puris etc.
