ABOUT Eggless Mango Semolina Cake RECIPE

Eggless mango semolina cake is super easy to prepare. This cake is moist, dense in texture and so aromatic with its delicious mango flavor. Mango pulp folded with semolina, cardamom, and few handful nuts gives you chewy experience with every bite. A perfect cake to bake in mango season and you can never go wrong with it.

Ingredients Serving: 12

  1. 1 Cup semolina/ sooji
  2. 1 Cup thick mango puree
  3. 1/4 Cup oil
  4. 1/2 Cup sugar
  5. 1 Tsp baking powder
  6. 1/2 Tsp powdered cardamom
  7. 1/4 Cup chopped nuts (cashew and pistachio) + 1 tbsp for garnishing

Instructions

  1. Mix well dry ingredients: semolina ,baking powder, chopped nuts, and sugar in a bowl
  2. In another bowl, add mango puree and oil. Mix well.
  3. Now add dry ingredients to wet ingredients and mix until well combined. Rest the batter for 20 minutes.
  4. Preheat the oven at 180C and line baking pan
  5. Pour batter to baking pan and level evenly. Garnish with chopped nuts and bake for 30-40 minutes until done.Baking for longer time will harden the cake
  6. Cool the cake completely. Slice and serve the cake at room temperature
