ABOUT Chaula Bara With Tentuli Paani RECIPE

It is a very popular and traditional street food of Western Odisha.

Ingredients Serving: 3

  1. For Bara-
  2. Par-boiled rice or Usuna Chaula 1/2 cup
  3. Chopped onion 1
  4. Chopped green chili 2
  5. Grated ginger 1 tbsp
  6. Chopped coriander leaves 3 tbsp
  7. Chopped mint leaves 3 tbsp
  8. Baking Soda 1/4 tsp
  9. salt as per taste
  10. Oil for deep frying
  11. For tentuli paani (tamarind water) -
  12. Tamarind 5-6 lemon sized
  13. Grated ginger 1 tbsp
  14. Crushed green chili 1 tbsp
  15. Crushed mint leaves 3 tbsp
  16. Roasted cumin powder 1 tsp
  17. Black salt 1/2 tsp
  18. Sugar as per taste
  19. salt as per taste

Instructions

  1. Soak usuna chaula or par-boiled rice overnight.
  2. Grind to a thick coarse paste by adding little water.
  3. Transfer to a mixing bowl. Except oil, add rest of the ingredients for bara and mix well
  4. Heat oil in a kadhai. Drop small balls of mixture into hot oil
  5. Deep fry over medium heat till golden brown and crisp. Drain excess oil over kitchen towel
  6. For tentuli paani (tamarind water) -
  7. Soak tamarind in warm water for 15-20 mins. Mash and strain the pulp.
  8. Add 1 cup water with rest of the ingredients to tamarind pulp
  9. Mix well, the water should have chatpata taste
  10. Serve hot crispy bara with chatpata tentuli paani.
