ABOUT Broccoli Tots! RECIPE

These are Super easy and Super nutritious; perfect for a monsoon after school treat! The mixed fruit chutney is a nice way to consume fruits during monsoon.

Ingredients Serving: 2

  1. Broccoli florets. 1 cup (heaped)
  2. Sweet potato boiled and mashed. 1/4 cup
  3. Garlic. finely chopped 1 teaspoon
  4. Onion finely chopped. 1/4 cup
  5. Pepper crushed. 1 teaspoon
  6. Salt. to taste
  7. Mixed Italian herbs. 1 teaspoon
  8. Chilly flakes. 2 teaspoons
  9. All purpose flour. 4 tablespoons
  10. Mayonnaise. 3 tablespoons
  11. Polenta or bread crumbs. 3 tablespoons

Instructions

  1. Heat water in a pan; add broccoli florets and blanch them for 2 or 3 minutes.
  2. Remove and place in a strainer.
  3. Grate in the biggest pores of a box grater
  4. Squeeze out water with your hands when cool enough to handle
  5. Squeeze out the water from the sweet potato and add to broccoli
  6. Add salt, pepper, herbs, chilly flakes, 1 tablespoon bread crumbs or polenta, garlic and onions
  7. Mix well; take small amounts of this mixture and shape into rectangles: 3 inches long and 1 inch wide and 1/2 inch thick
  8. Place in a tray and refrigerate for 30 minutes or till you are ready to fry.
  9. Heat oil for deep frying or shallow frying
  10. Take the all purpose flour, mayonnaise and polenta in 3 separate cups
  11. Take each tot, roll carefully in the flour, coat with mayonnaise and finally roll in the breadcrumbs or polenta
  12. Place in the pan and fry till golden on both sides
  13. Remove into a tissue paper and press gently to drain excess oil
  14. Serve with a dip of your choice.
  15. I served them with a homemade mixed fruit chutney
