About Pheni Khaja Recipe

It is one of the famous prasad of lord Jagannath's chhapan bhog, at puri temple in odisha,its taste was heavenly, its very crispy,not too much sweet,u can store it also..

Ingredients to make Pheni Khaja

  • all purpose flour 2 cups
  • melted Desi ghee 4 tablespoons
  • sugar 3 cup
  • water 2 and half cup
  • rice flour one and half spoon
  • melted desi ghee 3 tbsp
  • oil for frying

How to make Pheni Khaja

  1. TAKE 2 CUPS ALL PURPOSE FLOUR, ADD 4 TBSP MELTED GHEE, MIX
  2. ADD SUFFICIENT WATER, KNEAD INTO A STIFF DOUGH
  3. COVER & SET ASIDE FOR 15-20 MINS
  4. TAKE 1 TBSP RICE FLOUR, ADD 3 TBSP GHEE
  5. MIX INTO A PASTE, SET ASIDE
  6. KNEAD THE RESTED DOUGH AGAIN FOR 1 MINUTE, ROLL, DIVIDE INTO EQUAL PARTS
  7. ROLL OUT THIN ROTIS
  8. APPLY THE READY RICE FLOUR PASTE
  9. REPEAT THE SAME PROCESS, ADDING LAYERS OF ROTI WITH THE RICE FLOUR PASTE IN BETWEEN
  10. GENTLY ROLL IT UP LIKE THIS
  11. CUT INTO EQUAL PARTS, YOU CAN SEE THE LAYERS
  12. PRESS DOWN GENTLY, ROLL IT OUT LIGHTLY
  13. DEEP FRY IN HOT OIL ON LOW HEAT
  14. THEY WILL GRADUALLY START FLOATING ON TOP LIKE THIS
  15. FLIP & COOK FROM BOTH SIDES UNTIL GOLDEN BROWN & CRISP
  16. THE KHAJAS ARE DONE NOW, TAKE OFF HEAT
  17. FOR THE SUGAR SYRUP- BOIL 3 CUPS SUGAR WITH 2.5 CUPS WATER
  18. DIP THE FRIED KHAJAS IN THE SUGAR SYRUP FOR 2-3 SECONDS, COOL, STORE IN AN AIRTIGHT CONTAINER
