I love this mango pickle recipe which is spiced up with the right ingredients to leave your mouth watering
In a clean and dry glass jar, place a few mango pieces at the bottom and add a layer of salt and repeat until you finish all the mangoes.
Let the jar rest near a sunny window for a week or two.
Roast fenugreek seeds, aniseed, mustard and onion seeds, let cool and pound or process it into a fine powder.
Mix this, fennel seeds, mustard , turmeric powder and chilli powder together
In a bowl, mix this spice mixture with mangoes, coat evenly.
Heat oil in a pan till smoky and turn it off. Let it cool.
Stuff the magoes into a jar and pour the oil until 1/4 head space.
Leave the jar in the sun for two weeks.
Enjoy with parathas.
