Delicious mixed vegetable curry cooked in Kolhapuri masala

Ingredients Serving: 3

  1. 3 tbsp oil
  2. 1 medium sized onion finely chopped
  3. half capsicum or bell pepper cubed
  4. two tomatoes finely chopped
  5. half teaspoon turmeric
  6. salt to taste
  7. 3 tbsp chopped coriander leaves
  8. 1 teaspoon ginger garlic paste
  9. water as required
  10. one cup cauliflower florets
  11. 5-6 beans chopped
  12. one small carrot cut into three pieces
  13. half potato cubed
  14. To Roast and Grind masala
  15. 2 tbsp grated coconut
  16. three dry Kashmiri red chilli
  17. 4 Black peppercorns
  18. 1 black cardamom
  19. 1 inch cinnamon stick
  20. 2 green cardamom
  21. 1 teaspoon poppy seeds
  22. one teaspoon sesame seeds
  23. half teaspoon jeera
  24. 1 teaspoon coriander seeds
  25. 2 cloves


  1. dry roast all the ingredients mentioned under masala section over low heat for 2 minutes, allow to cool completely and grind to fine powder keep it aside
  2. boil vegetables with little salt in 2 cups of water for 10 minutes or until they are almost cooked, keep it aside
  3. heat oil in a pan add onions and stir fry until translucent
  4. add ginger garlic paste and stir until raw Aroma goes away
  5. add tomatoes and cook until Tomatoes are tender and mushy
  6. add capsicum /bell peppers and lightly saute
  7. add turmeric and prepared ground masala with salt. mix well ,cook until oil starts leaving the sides
  8. Drain excess water from veggies. Keep water aside. Add the veggies to pan. Mix well
  9. Add water and coriander leaves. Adjust water required as per gravy consistency
  10. Cover and simmer for 15 minutes
  11. Garnish with coriander leaves. Serve hot
