ABOUT Thengai Saadam RECIPE

(Satvik, GF Coconut Rice - South Indian style, can be vegan too)

Ingredients Serving: 2

  1. * Raw rice – 1 cup (Use normal white rice, short grained)
  2. * Oil – 2 TBSP
  3. * Grated coconut – ½ cup
  4. * Tempering : Mustard seeds, Urad Dal, red chillies (broken), Curry leaves – few, Cashew bits,
  5. * Asafoetida – a generous pinch (skip for GF)
  6. * Cilantro – for garnish
  7. * Salt – to taste
  8. * Ghee  / clarified butter – 1 tsp (skip for Vegan version)
  9. Coconut Oil - 1/2 tsp (optional)

Instructions

  1. Wash and cook rice. Spread on a plate and fluff up a bit. Tip : It helps if you have cooked rice made ahead – the cooled rice works wonderfully well. In a pan, add oil & add the ghee too.
  2. Splutter mustard, hing, urad dal, broken chillies, cashews, curry leaves and fry till cashews turn golden brown.
  3. Turn the flame to low and add the grated coconut till it leaves a little oil on the sides and the mixture turns aromatic. If using Coconut Oil, add it now.
  4. Turn off the stove. Add salt and cool Now add the cooled and fluffed rice to the pan. Mix well and enjoy a bowl of divine goodness
