Spicy coconut rice

Ingredients Serving: 4

  1. Basmati rice - 1 cup
  2. Grated fresh coconut - 1 cup
  3. Curry leaves - 1 Spring
  4. Coriander - 1/8th cup
  5. Mustard Seeds - 1/2 tspn
  6. Cumin seeds - 1/2 tspn
  7. Asafoetida - 1 pinch
  8. Green Chilli - 2 or as per choice
  9. Ghee - 2 tbspns
  10. Soaked chana dal - 1/2 tbspn
  11. salt as per taste

Instructions

  1. Wash basmati rice and soak in water for 30 mins.
  2. Make tempering with 1 tbspn ghee, mustard seeds, cumin seeds, asafoetida, curry leaves, chana dal, green chilli. Switch off the gas, add coconut and coriander leaves.
  3. In pressure cooker take 1 tbspn ghee. Add drained rice, salt as per taste and 1.5 cups water. Keep the coconut +tempering on rice and give 3 whistles on high flame.
  4. Switch off and let pressure settle down.
  5. Open and mix coconut mixture with rice carefully and close the lid for 15 mins. Rice is ready to serve.
