ABOUT Easy Frozen Mango Yogurt RECIPE

Summer drips in mangoes in my city. Intense heat makes them sweeter. This is a fantastic no fuss creamy, tangy sweet recipe for mango frozen yogurt which can be made without an ice cream maker. Made with luscious mangoes and thick yogurt this is all you will need to keep you cool on hot summer afternoons.

Ingredients Serving: 2

  1. Ripe mangoes 2-3 (2 cup of fresh frozen mango cubes)
  2. Regular hung Yogurt 1 cup (You can use Greek Yogurt too)
  3. Honey 2 table spoon
  4. Ginger Juice 1/4 teaspoon
  5. Basil leaves 1-2 crushed fine (Optional)
  6. Lime Juice 1 tablespoon
  7. Pure Vanilla 1 teaspoon (Optional)
  8. Powdered green cardamom 1/2 teaspoon
  9. Raisins - A handful (Optional)

Instructions

  1. Wash, peel and cube ripe mangoes and freeze them in a zip lock bag. In a blender process the frozen mango cubes till a smooth creamy pulp.
  2. Add yogurt, honey, vanilla, lime juice, ginger juice and a crushed basil leaf. Blend the mixture for 2-3 minutes till the mixture is creamy and fluffy. Toss in the raisins and stir.
  3. Process it for another minute or two and then scoop it out in a chilled freezable container. Close the lid tightly before putting it away in the freezer for 45 minutes. I used an airtight plastic container but an aluminium container is the best.
  4. After 45 minutes, use a spatula to scrape the already frozen edges of the mixture toward the still soft center and then whisk well. If the mixture is frozen completely, cut it with a knife and churn in the blender for a minute till it breaks.
  5. Keep it in the freezer for two more hours, repeating the stirring process after every 30 minutes or until nicely frozen and set.
