ABOUT Lamington Cake RECIPE

It's an Australian cake. The vanilla sponge is cut to cubes or rectangles,coated with chocolate and rolled over desiccated coconut.

Ingredients Serving: 8

  1. For the Vanilla Sponge.
  2. 1cup+2tbsp all purpose flour.
  3. 1tesp baking powder.
  4. 1 cup sugar.
  5. 2 Eggs.
  6. 1/4 cup melted butter.
  7. 1/2 cup +2tbsp milk.
  8. 1 /2 tesp vanilla essence.
  9. For the chocolate coating.
  10. 130 grams white chocolate.
  11. 1/2 cup amul cream.
  12. 1 tesp butter.
  13. 1/2 tesp strawberry essence.
  14. Pink colour few drops.
  15. 2 cups desiccated coconut.

Instructions

  1. Line an 8" square tin.
  2. Pre heat oven 180℃ for 15 minutes.
  3. In a bowl add egg and sugar,with an electrical hand mixer beat it creamy.
  4. Mix in the vanilla essence,milk and butter.Whisk to combine well.
  5. Fold in the seived all purpose flour and baking powder.
  6. Transfer to the pan .Bake at 170℃ for 30 to 35 minutes or a skewer inserted into the cake comes out clean.
  7. Remove let cool for few minutes,transfer to wire rack and cool completely.
  8. Prepare the chocolate coating.
  9. Using the double boiler method, melt chocolate,butter,cream till smooth.
  10. Add strawberry essence and colour and mix well.
  11. Remove cool for 20 minutes.
  12. Cut the cooled cake to cubes or rectangles.
  13. Coat the cake pieces with melted chocolate and roll over desiccated coconut.
  14. Lamington cakes are ready to serve.Enjoy the yummy taste.
