Ingredients Serving: 4

  1. Chhena 1 cup (made of 750ml milk and 2 table spoon lemon juice)
  2. Rice flour 1/4 cup ( govindo bhog rice flour)
  3. 1/2 cup Milk
  4. Oil or Ghee for Deep frying
  5. Sugar 1cup
  6. Water 1 cup for thick sugar syrup
  7. Cardamom powder 1 teaspoon
  8. For nikhutis: 1 table spoon milk powder,
  9. 1 table spoon maida
  10. 1/2 teaspoon baking soda
  11. 1 teaspoon ghee
  12. 1 table spoon milk
  13. 1/2 cup sugar
  14. 3/4 cup water

Instructions

  1. BOIL MILK
  2. ADD LEMON JUICE
  3. STIR
  4. PASS THROUGH A CLEAN COTTON CLOTH
  5. SQUEEZE THE EXCESS WATER
  6. DEEP IN COLD WATER
  7. NOW TAKE THE CHHENA OR PANEER
  8. ADD RICE FLOUR
  9. MIX AND KNEAD
  10. ADD MILK
  11. KNEAD PROPERLY MAKE A DOUGH AND KEEP ASIDE
  12. TAKE SUGAR AND WATER AND HEAT IT TO BOIL
  13. ADD CARDAMOM POWDER
  14. MAKE A THICK STICKY SUGAR SYRUP
  15. NOW HEAT GHEE ( OR OIL)
  16. TAKE A SMALL PORTION OF THE PANEER DOUGH AND PASS THROUGH A SIEVE OR VEGETABLE GREATER
  17. DEEP FRY ON MEDIUM LOW FLAME DRAIN EXCESS OIL
  18. ADD TO THE SUGAR SYRUP
  19. NOW FOR NIKHUTI ( SMALL JAMUNS) MIX MILK POWDER, MAIDA, BAKING SODA, GHEE AND SLIGHTLY MILK
  20. MAKE A DOUGH
  21. MAKE SMALL BALLS OF THE DOUGH
  22. DEEP FRY IN THE SAME OIL OR GHEE
  23. AND DEEP IN SUGAR SYRUP COOK FOR 2-3 MINUTES
