Mango bruschetta with a tantalizing balsamic glaze drizzled on top of a warm grilled ciabatta is a perfect way to show love to the king of fruits. Its fun, fast and fabulous.

Ingredients Serving: 4

  1. Ciabatta or any French loaf- 1, cut into diagonal slices of 1/2 inch thickness
  2. Red Bell Pepper, chopped into tiny bits - ¼ Moscato grapes sliced - 5
  3. Cream cheese spread - as needed to spread on the slices.
  4. Mozzarella cheese, thinly slices- as garnish
  5. Red chillie flakes - a few
  6. Ripe mangoes diced - 2 (depending on the size)
  7. Garlic to taste
  8. Salt to taste
  9. Balsamic glaze - to drizzle on
  10. Mint leaf - a handful

Instructions

  1. Start by making the balsamic glaze. In a saucepan, boil 1 cup of balsamic vinegar with about 1/2 cup of honey till it reached a syrupy consistency. Set aside to cool.
  2. Next chop up the fruits. Grill the sliced bread till crispy, spread cream cheese as much as desired.
  3. Pile up the fruit on it, add a few mint leaves, and place mozzarella on it.
  4. Drizzle with the balsamic glaze, sprinkle some garl salt and red chillie flakes as desired and serve immediately. Bon appetite!!
