Mango Passion Fruit Melting Moments, these great little 'light as a feather' meltingly crisp style biscuits or cookies are A-M-A-Z-I-N-G !! Sandwiched with aromatic mango and passion fruit butter cream, these biscuits live up their name by literally melting in your mouth, not kidding, try it , you will be smitten :)

Ingredients Serving: 6

  1. 5 tbsp. Thick Mango Pulp
  2. 5 tbsp. Passion fruit pulp without seeds
  3. 500 g Salted butter
  4. 120 g Icing sugar
  5. 460 g Plain flour
  6. 150 g Cornflour ( Starch )
  7. 5 tbsp. just boiled water
  8. For Butter Cream
  9. 200 g Salted Butter at room temperature
  10. 300 g Icing sugar , sifted

Instructions

  1. Preheat the oven to gas mark 4. To make biscuits, cream together the butter and icing sugar with electric beaters or in a free standing mixer until pale and fluffy.
  2. Sift in the both flours and add 2 and half tbsp. mango pulp and 2 and half tbsp. passion fruit pulp. Also add 5 tbsp. just boiled water. Beat until the mixture comes together.Attach a large star nozzle to a piping bag and fill the bag wi
  3. Pipe 60 rosettes onto lined baking sheets about 3 cm apart. Bake for 20-25 minutes or until pale golden. Remove the baking sheets from the oven and leave them to cool for 5 minutes on the baking sheets.
  4. Then let it cool completely on a wire rack. Meanwhile make the mango and passion fruit butter cream by beating together the butter and icing sugar and remaining both pulp ( Mango and Passion fruit ) until pale and fluffy.
  5. Sandwich the biscuits together using a generous amount of butter cream and finish with a dusting of icing sugar. Enjoy !
