Ingredients Serving: 10

  1. Whole wheat flour 1 & 1/2 cup
  2. olive oil 1 cup
  3. eggs 4 numbers
  4. Brown sugar 1/2 cup
  5. White granulated sugar 1/2 cup
  6. Grated carrot 1 cup
  7. Baking powder 1 & 1/2 teaspoon
  8. cinnamon powder 1 teaspoon
  9. Vanilla essence 1 teaspoon
  10. almond flakes 1 tablespoon to garnish
  11. Icing sugar 1 tablespoon to garnish


  1. Sieve whole wheat flour, cinnamon powder and baking powder together. Keep them aside.
  2. In a big mixing bowl add olive oil and both kinds of sugar.
  3. With a hand mixer blend them together to form a creamy batter.
  4. Add eggs one at a time and mix well with the mixer.
  5. After all eggs mixed well with the oily batter add vanilla essence and grated carrot. Mix to incorporate.
  6. When everything is mixing well to form a homogeneous mixture, add the sieved dry mixture of wheat flour, baking powder and cinnamon powder.
  7. Mix with the egg batter with a spatula. The consistency should be like thick batter.
  8. Set the oven at preheated mode at 180 degree Centigrade for 10 minutes.
  9. Line a cup cake tray with muffin/ cup cake liner.
  10. Pour the prepared batter to each muffin mould with a ice cream scoop. Fill up to 3/4th of the mould.
  11. Garnish each one with almond flakes.
  12. Place the tray in the preheated oven and bake them for about 20 minutes or till done.
  13. Take out from the oven and let them cool.
  14. Dust some icing sugar on the cooled muffins.
  15. Healthy carrot muffins are ready to enjoy!
