Kairi Panha

Ingredients to make Kairi Panha

  • 2 large raw mangoes
  • 1-1/4 cup sugar
  • 1 Cup water
  • 1-1/2 tsp cardamom powder
  • Few saffron strands
  • Pinch of salt
  • Ice cubes
  • Chilled water

How to make Kairi Panha

  1. Boil or pressure cook whole mangoes till very soft.
  2. Remove the pulp and blend in mixie/food processor till smooth.
  3. Boil sugar and water to make 1-thread consistency syrup.
  4. Add the pulp to the syrup and simmer on low heat till thick.
  5. Add dash of salt. Switch off gas.
  6. Add saffron strands and cardamom powder (or as per taste).
  7. Cool it thoroughly and store in airtight glass bottle in the refrigerator.
  8. To serve, add 3 tsp (or more if desired) of pulp in a glass. Add crushed ice/cubes. Top it off with cold water. Sprinkle little cardamom powder as garnish.
