ABOUT Mango Royal Falooda RECIPE

Falooda is a Persian dessert which was introduced to India during the Mughal period. Falooda is a cold beverage/dessert that is popular mostly in Northern parts of India. Traditionally this beverage is prepared by mixing rose syrup, falooda sev (vermicelli), sabza seeds (basil seeds), tapioca pearls and gelatin or jelly. Rose syrup is the main ingredient in any falooda recipe. Royal or Shahi falooda has a few more ingredients added like ice cream, almonds, pistachios, some even soak these nuts and grind it with milk and add that to the falooda.

Ingredients Serving: 2

  1. Rose Syrup – 4 tbsp
  2. Sabza seeds (basil seeds) – 2 tbsp soaked in water (it will grow in size and become double i.e 4 tbsp)
  3. Falooda sev/vermicelli – 1/4 cup
  4. Chilled milk – 1 cup (mixed with desired quantity of sugar)
  5. Mango puree – 1/2 cup
  6. Mango ice cream – 2 scoops
  7. Vanilla ice cream – 1 scoop
  8. For garnish:
  9. Chopped mango pieces
  10. Chopped pistachios
  11. Chopped Almonds

Instructions

  1. Scoop out the flesh of mangoes and grind into smooth mix/puree. Keep aside.
  2. Soak sabza seeds in water for 30-40 minutes. Keep aside.
  3. Cook falooda sev as per packet instrcutions. If you do not have falooda sev you can use the normal sev. Cook in water, once cooked, immediately rinse, drain the sev and keep aside to cool completely.
  4. Chop mango pieces into small cubes. Chop pistachios and almods into thin pieces. keep them all aside. Now let’s assemble the mango and rose milk falooda.
  5. Into the serving glass add rose syrup. Then add 1 tbsp of sabza seeds.
  6. Add 2 tbsp of falooda sev. In slow stream pour 1/4 cup chilled milk.
  7. Next add mango puree, top it with 2 tbsp of mango ice cream.
  8. Repeat step 6 to 8 forming layers until you have filled your glass. Finally top with vanilla ice cream on one corner of the glass and mango ice cream on other corner. Garnish with pistachios and almonds.
  9. Serve falooda immediately.
