ABOUT Coconut Rice RECIPE

Coconut rice is a very famous South Indian dish.

Ingredients Serving: 3

  1. 1. 5 cups boiled rice
  2. 1 cup grated coconut
  3. 5 dry red chilli deseeded
  4. 1 green chilli
  5. 6 tblspn peanuts
  6. 1 tspn sesame seeds
  7. 3 tblspn coconut oil
  8. 1 tspn chana dal
  9. 1 tspn urad dal
  10. 1 pinch of hing
  11. 1/4 tspn turmeric powder
  12. Few curry leaves
  13. Salt to taste
  14. 1 tspn mustard seeds

Instructions

  1. First lets make the paste for the rice.
  2. Put 1 cup grated Coconut in the mixing jar by adding 3 dry red chilli deseeded, 1 tspn sesame seeds, green chilli and 3 tblspn peanuts.
  3. Now add 2 tblspn water and blend it into semi fine paste.
  4. Now take a pan and heat it by adding 3 tblspn coconut oil in it.
  5. Now put 3 tblspn peanuts in it and saute it.
  6. But stirr it continously on low flame so that it does not get burnt from the bottom.
  7. Now add 1 tspn mustard seeds.
  8. When it starts spluttering then add chana and urad dal into it.
  9. Stirr it till it gets brown in color.
  10. After that add dry red chilli deseeded, hing, curry leaves and turmeric powder.
  11. Saute it by stirring continously..
  12. Now add the Coconut Paste.
  13. Stirr it while mixing for 3 to 4 mins.
  14. Now add salt and mix it again.
  15. Now switch off the flame.
  16. Now we have to mix this Coconut paste into cooked rice.
  17. So mix the cooked rice into the Coconut paste very well so that they are combined to each other properly.
  18. Now its ready to eat.
  19. Serve it with yogurt or chips.
  20. Ihave served this coconut rice with Mango onion chutney too.
