Ingredients Serving: 3

  1. 1 cup oats plain oats
  2. 1 cup curd
  3. 1/2 tsp mustard seeds
  4. 1/2 cup water or more as required
  5. 1/2 tsp urad dal
  6. 1/2 tsp chanadal
  7. 1/2 cup rava
  8. 2 tsp oil
  9. salt to taste
  10. 1 carrot grated
  11. 1/2 tsp mustard seeds
  12. 2 tsp chopped curry leaves
  13. 2 tsp chopped coriander leaves
  14. 12-14 cashews
  15. 1/2 tsp jeera
  16. 1/2 tsp baking soda
  17. 1 green chili chopped optional

Instructions

  1. Dry roast the oats for 2 minutes. roast till they turn crisp. Allow to cool. Grind to coarse powder
  2. Heat 2 tsp of oil in a pan. add mustard seeds, urad dal, jeera, channa dal. saute till they splutter.
  3. Fry the grated carrot and chillies for a minute or two.
  4. Add rava ans roast until fragrant. Allow mixture to cool completely
  5. Add oats, water, curd, salt , curry and coriander leaves. Mix well. Allow batter to rest for 10-15 minutes
  6. Grease idli mould and place cashews in each mould
  7. Add baking soda to batter and mix well. Pour batter into idli moulds and steam for 10 minutes
  8. Allow to cool for 5 minutes. Demould and serve with chutney or sambar
