ABOUT TENDER COCONUT RAVA DOSA RECIPE

An innovative recipe which uses tender coconut as one of the main ingredient in these crisp Dosas..used both in the batter and the filling..

Ingredients Serving: 4

  1. Rice flour 1 cup
  2. Rava 3/4 th cup
  3. Tender coconut paste 2 tablespoons
  4. Finely chopped tender coconut 1 tablespoon
  5. yoghurt 1/2 cup
  6. Salt according to taste
  7. chopped coriander leaves 1 tablespoon
  8. Medium boiled potatoes 8
  9. Medium onion 1
  10. Mustard seeds 1/2 teaspoon
  11. Chana dal 1/2 teaspoon
  12. Ground nut 5-6
  13. Curry leaves 5-6
  14. Turmeric powder 1/4 th teaspoon
  15. Oil as required

Instructions

  1. Tender Coconut Dosa batter:
  2. In a mixing bowl mix the rice flour, rava, tender coconut paste and yoghurt.
  3. Add water to bring it into a medium consistency. It should not be too thin or too thick.
  4. Add chopped tender coconut pieces and coriander leaves.
  5. Add salt and keep aside covered for 15 minutes.
  6. Potato filling:
  7. In a wok heat oil and add mustard seeds, a slit green chilli, curry leaves , chana dal and ground nut.
  8. Then add the finely diced onion followed by tender coconut pieces.
  9. After two minutes add the boiled and mashed potatoes.
  10. Mix well and add turmeric powder and salt. Add chopped coriander leaves.
  11. Making of Dosa:
  12. First heat a tawa and drizzle a bit of oil.
  13. Then take a tissue paper to spread it evenly.
  14. Pour a ladle of batter in the centre and spread in a circle.
  15. Add oil from the sides and in the centre.
  16. After a minute start scraping the sides.
  17. When the crepe starts to brown and looks crisp, carefully turn to cook the other side.
  18. Flip again and place the potato tender coconut filling in the middle.
  19. Fold the dosa and serve with your favourite chutney and a few pieces of tender coconut.
