- 1 medium onion finely chopped
- 1 sweet Red pepper
- 6 cloves Garlic finely chopped
- 6 large boneless skinless chicken thighs (about 1 1/4 lb)
- 4 large canned plum tomatoes with puree (juices)
- 1 chipotle pepper in Adobo sauce chopped
- 1/4 cup water
- salt to taste
- 1/2 tsp ground cumin
- 1/2 tsp smoked Paprika
- 1/2 tsp Mexican chilli powder or Cayenne pepper
- 1/2 tsp Oregano
- 1/4 cup finely chopped fresh coriander leaves
- juice from half a lemon
- 8 whole wheat or Corn Tortillas
- Additional Toppings:
- avocados chopped
- tomatoes chopped
- Red onions slices
- Red cabbage chopped
- Lettuce Guacamole and shredded Cheese
