ABOUT Pudachi Vadi / Kothimbir Vadi RECIPE

Very tempting Maharashtrian snack, crunchy crispy fritters stuffed with coriander and coconut with flavourful spices . Tastes yum with tea - coffee, can be served as snacks, starter or side dish .

Ingredients Serving: 4

  1. finely chopped coriander 4 cups
  2. Grated and roasted coconut 2 cups
  3. besan 2-3 cups
  4. Rice flour 1-2 tablespoon
  5. Wheat flour 1 tablespoon
  6. Oil as per need for kneading dough and deep fry
  7. Turmeric powder 2-3 teaspoon
  8. Garam masala 2 teaspoons
  9. Red chilli powder 1-2 teaspoons
  10. Salt according to taste
  11. sugar 1 teaspoon
  12. Lemon juice 4 - 5 teaspoons
  13. Roasted Sesame seeds 1 tablespoon
  14. Roasted Poppy seeds/ Khaskhas 2-3 teaspoons
  15. Grated ginger 1 teaspoon
  16. Crushed garlic 1 teaspoon
  17. Green chilli paste as per taste

Instructions

  1. Assemble all the ingredients needed
  2. Wash and finely chopped coriander and pat dry for sometime (under fan )
  3. In a mixing bowl take, besan, rice flour, and wheat flour ... Add some turmeric powder, salt according to taste and 2 tablespoons of oil and mix it well
  4. By adding little water prepare a medium hard dough. Keep it covered for rest for sometime
  5. In a mixing bowl, add all above mentioned ( and shown) ingredients in the list for stuffing. Add chopped coriander, grated coconut, sesame seeds, poppy seeds, ginger garlic and green chilli paste, some turmeric powder, red chilli powder, Garam Masala, lemon juice sugar to taste, and salt according to taste. mix everything properly , to prepare stuffing
  6. Now take, small portion from ready dough and roll out a small Puri and put sufficient amount of stuffing on it
  7. Seal it from all the sides and prepare a role
  8. Heat sufficient oil in a heavy bottom pan
  9. Deep fry all the Pudachi Vadi / Kothimbir Vadi on Low heat, till golden brown and crisp from all the sides
  10. Serve hot or cold with tomato sauce or green chutney... it's just temptingly tasty yummy mouth watering
  11. Once it is cool properly, store it in airtight container . It stays well for 7 days outside the fridge
