ABOUT Leche frita (Fried milk) RECIPE

Leche Frita originated in Spain and is their most popular street food. The translation can be a bit puzzling because it translates directly to mean "fried milk." The "milk" is actually a deliciously sweet, firm, cold milk-pudding that is encased in a warm and crunchy fried shell of flour and egg. Note- When preparing the custard in the boiling process, the key is to constantly whisk the mixture and avoid bubbles as it begins to thicken. The most important part of this recipe is making sure that the mixture thickens enough to solidify in the fridge. If it doesn't, you won't be able to fry it without it falling apart. So plan ahead, take your time when heating it on the stove, and refrigerate it for as long as possible!

Ingredients Serving: 4

  1. Milk 1litre
  2. Sugar 1/2cup or more according to taste
  3. APF 2tsp + 3tbsp (for coating)
  4. Cornflour 3tsp
  5. Cinnamon stick 1
  6. Lemon peel 2
  7. Egg 2
  8. Grounded cinnamon 1tsp
  9. Powdered sugar 2tsp
  10. Oil for deep frying

Instructions

  1. BOIL MILK, ADD CINNAMON STICK AND
  2. LEMON PEEL.
  3. BOIL FEW MINS.
  4. ADD SUGAR AND COOK TILL IT MELTS.
  5. SWITCH OFF AND STRAIN THE MIXTURE.
  6. ADD CORNFLOUR AND MAIDA IN A MIXING BOWL.
  7. ADD MILK, MIX AND MAKE A LUMP FREE MIXTURE.
  8. MIX THIS TO THE STRAINED MILK MIXTURE.
  9. COOK ON LOW FLAME STIRRING CONTINUOUSLY TILL IT THICKENS.
  10. IT WILL TAKE AROUND 10-12MINS.
  11. THE MIXTURE SHOULD BE THICK LIKE THIS.
  12. SWITCH OFF.
  13. GREASE A CONTAINER AND POUR THE MIXTURE. IT SHOULD BE 2CM DEEP.
  14. BEAT THE EGGS IN A BOWL.
  15. TAKE OUT THE COOLED MIXTURE FROM THE REFRIGERATOR.
  16. AND CUT INTO SQUARE SIZE PIECES.
  17. COAT EACH OF THE SQUARES BY DREDGING THEM IN THE FLOUR AND
  18. THEN DIP THEM IN THE BEATEN EGG.
  19. FRY IN THE HOT OIL FOR APPROXIMATELY 1 MINUTE ON EACH SIDE, UNTIL VERY LIGHTLY GOLDEN.
  20. TAKE POWDERED SUGAR AND GROUNDED CINNAMON IN A PLATE.
  21. MIX WELL.
  22. COAT THE FRIED SQUARES IN SUGAR CINNAMON MIXTURE.
