ABOUT Mango Soup RECIPE

Mango is the national fruit of India, also called as the King of fruits by many. This is not only because of the great taste of mangoes, but because of the nutritional value of Mango as well. It is a rich source of Vitamin A, C and D. From the great poet kalidasa, the mighty Alexander to the explorer Hieun Tsang; everyone praised Mango. We can use Mango in various ways, mostly to prepare various desserts. But today, we will prepare a Soup with Ripe Mango.

Ingredients Serving: 3

  1. 2 medium size ripe Mangoes
  2. 1 small size Carrot
  3. 1 tablespoon of grated Coconut
  4. 1 / 2 cup of Coconut Milk
  5. 1 teaspoon of cumin powder
  6. 1 teaspoon of Coriander Powder
  7. 1 tablespoon of White Oil
  8. 2 Tablespoon of Sugar
  9. Salt to taste

Instructions

  1. Take the Ripe Mangoes and press evenly from all the sides till it turns soft uniformly. Remove the eye of the Mango and squeeze it very well to collect the pulp in a bowl. Keep it aside.
  2. Cut the Carrot in small dice like pieces.
  3. Next, heat a pan in low flame and add 1 tablespoon of White Oil in it.
  4. When the oil starts getting hot, add Grated Coconut and Carrot pieces in it.
  5. Next add a pinch of salt in it and add Cumin powder, Coriander powder in it and mix it well. Now put the lid and let it cook for 2 – 3 minutes on low flame till the carrots get soft.
  6. Now, take a blender; add the mixture of grated coconut and carrot pieces in it along with the Mango Pulp. Make a smooth paste.
  7. Now take the pan, and add the Coconut Milk in it and heat it in low flame for another 3 minutes.
  8. Pour the smooth mixture of mango, Grated Coconut and Carrot pieces. Stir continuously.
  9. Add 2 tablespoon of Sugar in it. Cook the entire mixture for another 4 – 5 minutes, while stirring continuously.
  10. After 5 minutes, take it off the heat and pour it in a deep bowl.
  11. Put it in the refrigerator and wait for an hour or two.
  12. Take out the bowl, and pour the Mango Soup in serving bowl and garnish it with mint leaves.
